Bacon, Egg & Cheese Breakfast Muffins!

These are perfect if you want something tasty and quick to grab for breakfast! I know that I often skip breakfast which leads to me snacking on random things throughout the morning. The even greater thing about these are how simple they are to make too!

Ingredients

  •  200g Bacon Lardons
  • 12 eggs
  • Grated Cheese
    You will also need; a Muffin tray, bowl, fork and muffin cases!
    (This will make 12)

Method

  1. Preheat your oven to 200 degrees (Fan Oven)
  2. Place your muffin cases into the muffin tin and lightly spray with oil
  3. Fry your bacon lardons until they are cooked then separate them into the muffin cases!
  4. Put a sprinkle of cheese into each muffin case
  5. Crack all your eggs into a bowl and whisk it until they are all broken up and smoothimg_7059(I added the bacon and cheese into the egg mix, this made it very difficult to get even amounts of bacon and cheese into the muffins, so I recommended doing  it the way explained here)
  6. Pour the egg mixture on top of the bacon & cheese being careful not to spill it everywhere!

  7. pop In the oven for approx. 15 mins, until the egg is fully cooked.

  8. Enjoy and keep the rest in a sealed container in the fridge for the next morning!

Cornflake Buns!

We had lots of Kinder Egg chocolate left over after Easter so we decided to make some yummy cornflake buns! Using the Kinder Egg chocolate made them even more yummier than normal!
If you have any spare chocolate laying about after Easter here is what you can do with it!

Ingredients
200g chocolate of choice!
7 tablespoons of golden Syrup
100g unsalted butter (room temp)
200g Cornflakes
& Muffin cases for big ones or cupcake if you want to make smaller ones!

Step One!
-Put the chocolate, butter & golden syrup into a saucepan, and slowly melt it together while stirring!

 

Step Two!
-Take the chocolate melted loveliness off the heat and add the cornflakes! Do this bit by bit stirring until they are all covered!

Step Three!
-Then separate the mixture into the cases, and place in the fridge for a few hours until they have cooled!

Step Four!
-Enjoy.. and try not to eat them all at once!

Shredded Paper!

Who knew something so simple could bring such joy!
I got a parcel in the post.. which obviously bought me joy, but then after taking out of it what I had ordered I had a great idea.. kind of!
We have been told to try and get our little man to do a lot of messy play/feeling different things.. anything sensory related to try and encourage him to eat better, which personally I thought was an odd suggestion until they told me that your hands and the feelings you accept on your hands is very similar to the way it feels when in your mouth! So we are hoping that if we encourage him to feel as much possible it will help with his eating! It isn’t as simple as it sounds.. as he refuses to touch anything that looks different generally! So when I opened my parcel I took out my things and noticed that the shredded paper felt a bit different, so I thought lets just see what the wee man makes of it!
He loved it! He was throwing it everywhere and by the end of it he was letting me put it on his legs without a fuss and passing it to me for me to do it again for him!
He was laughing, coming to me to engage in play, feeling something different, and trying to make eye contact! It was just fabulous. . and very simple to brush up after!
I really encourage you to use anything and everything for them to play with! Something that you think won’t be fun, or is just going to go in the bin, let your little one have a look at it! (if its safe for them obviously!) You never know what they will enjoy and learn from!

Blackberry Jam!

I made this with my little girl, we had so much fun and it was super simple!

Ingredients

  • Blackberries
  • Sugar (same amount as blackberries!)
  • Lemon Juice to taste

Method

  1. We first of all started off with going blackberry picking to get our most important ingredient! My little girl had so much fun doing this, we walked along and she picked the ones she could reach and pointed out too me the ones up high for me to pick! Obviously taste testing some as we went along! 😛
  2. Next we measured out how many blackberries we had, washed them under some warm water and then put them into a bowl! (we didn’t have a large amount)IMAG1719.jpg
  3. Then we mashed the blackberries up with our potato masher! This was lots of fun and a bit messy when she decided to see how fast she could do it..IMAG1722.jpg
  4. The sugar then is to be added, for us this was 1 and a half cups as we had one and a half cups of blackberries! Then mix it all together. Now is when you can add the lemon juice to taste if you want! We added a tiny little splash.IMAG1724.jpg
  5. Then pour the mixture into a saucepan, bring it to the boil while continuously mixing it! Once it has reached the boil, reduce the temperature down and stir it for a few more minutes.IMAG1725.jpg
  6. Finally find some old jam jars preferably to put it into! We didn’t have any so we used some bowls with lids that we had in the house, so anything can do really! Pop it into the fridge for a few hours to cool down. IMAG1729
  7. Find some nice bread and enjoy! .. Again we didn’t have any nice bread in the house and she was an eager beaver to try something that she had made! So we put it onto a bit of toast and really enjoyed it!

Simple Chocolate Fudge!

I saw a video of someone making this fudge online and could not believe how simple it was! I was sure it wasn’t going to taste as great as it did but it was super fantastic so had to share it with you all!

Ingredients

  • 1 tin of condensed Milk
  • 400 grams of chocolate
  • baking tray to put it in (mine was 9″x9″)
  • baking paper

Seriously that is all the ingredients you need!

Method!

  1. Line your baking tray with baking paper
  2. Put all of the ingredients in a bowl wpid-imag6497.jpg
  3. Mix them all up and put it in the microwave on high for 1 minuite .. if the chocolate doesn’t seem melted enough put it in for another 30 seconds. I have a 800watt microwave and went for 1min30 and it was  perfect!                       wpid-imag6501.jpg
  4. Pour into the baking tray lined with baking paper and put it in the fridge for 4-5 hours .. the longer the better!
  5. Take it out and lift the fudge block out of the baking tray using the baking paper, then place on a plate upside down and peal off the baking paper (slow and steady then comes off all in one go!)
  6. Cut it up into squares with a sharpish knife and enjoy! wpid-imag6518.jpg

It is simply delicious and so super easy to do! Great for parties, playdates .. anything!

Simple Must Try Fun!

With my little girl just starting preschool we have been trying to find ways to keep her busy but aren’t that strenuous as she is coming out of preschool exhausted and grumpy! She is really enjoying herself which is such a great thing and I’m starting to get used to the afternoon classes rather than the usual ones! This week is her first week of being in everyday! The hubby came home from work and was greeted by an exhausted me (my little man has lost his great sleeping ='[) and a hyper, yet grumpy girl as she was knackered! Until he announced that he had a fantastic idea! I sighed.. expecting it to be something utterly ridiculous, loud and messy… to my surprise it was not!
He looked at me and said “i just need some string and a hanger?” I was a bit suspicious.. what could you do with a bit of string and a hanger? This did not sound like fun.. it sounded like a big old let down! My oh my was I wrong!
I watched as he tied a bit of string from our door handle to the fire place, then ran upstairs and appeared with a hanger and my little girls favorite teddy/puppet who has fittingly been called “Monkey” .. I’m sure you can guess, he is monkey! She was bouncing about the place asking me what it was for and she was getting very excited… and I just was just very confused by it .. he then announced it was a Zip-line! I still couldn’t see how.. until he showed us!

As you can see by the look on her face.. this was one of the best things she had ever seen! She thought this was so fantastic! Such a simple idea and she had hours of fun! Everyday since she has had the zip-line!

So all you need is a length of string and two places to hang it.. the higher the better and a kids trouser hanger!
Little miss got a bit concerned that it would hurt her lovely toys, so we got them to “hold” on with there hands!

This is how monkey and how he held on! =]

Such a simple thing, yet entertained my little ones for ages and the dog! She thought it was great trying to catch a moving target.. Little miss didn’t appreciate this too much though so Lilo got a pigs ear and was happy as Larry to let the Zip lining continue! =] Little Miss loved it so much she even had to facetime nanny so that she could see the fun monkey was having!

A Miracle! – The Rabbit who wants to fall asleep!

Recently there has been a lot of people ranting and raving about how fantastic the book “The rabbit who wants to fall asleep” is! Being the person I am I thought that it would never work.. but seeing more and more reviews and people going crazy for it, I thought I had to give it a shot!

If you haven’t heard of this book, it is written by the Swedish psychologist Carl-Johan Forssen Ehrlin. She promises to have a child nodding off in no time, with a perfect combination of sentence structure and hypnotic words. Now my child is a very energetic one, and she did use to sleep really well, but as of recent it has taken a long time to get her to go to sleep, especially in her own bed! We tried the usual of star charts, getting to go places if she went to sleep first time and slept in her own bed.. everything! Nothing seemed to be working.. Until now!

The way the book works is that is gives suggestions to your child without your child really realizing that it is time to sleep, and to relax. It is important that you look at this book yourself first before you read it to your child as at the front it explains to you what all the different text styles mean in book. for example, if it is italics you read the words slowly and in a calm voice. It really helps to familiarize yourself with the book first before trying to read it right off the bat! There is also an audiobook of it which you can listen to with your child, or as I did, I listened to it first to see how it was intended to be read!

When I first got the book I was a bit thrown back by how long it was, 10 pages with small writing on them! My initial reaction was that.. she is never going to stay still long enough for me to finish this and i going to be up there for ages trying to get her to stay still and to listen to the whole book.. but I didn’t let this out me off! I went on with and thought that I would give it a chance!

Night 1 – She didn’t want to lay down, I got quizzed about every character, she didn’t like the wizard and she didn’t like the name of the snail. Though as I continued to read the story to her I could see that it was making her tired, and she didn’t like this! She was shaking her head, holding her eyes open and the such, fighting lovely sleep! Why would you do that! I left her room after reading it to her and she was asleep very quickly and didn’t come down stairs at all.. normally it would be at least three times! I was then convinced that she was on to what this book was wanting and would not be letting me read it to her again!

Night 2 – When she was doing her night time routine of going to the toilet and brushing her teeth she asked me would I read her the sleepy book again and would I call the rabbit something different and not do the wizard bit with the magic dust as it got in her eyes, so I did this. She didn’t ask as many questions about the book and lay down the whole time! She asked me to sit on the floor so that she could put her ffeet of the duvet and rolled over and was actually listening to the story without 1001 questions and was so close to sleeping! Though again she didn’t come down once and I’m assuming she was asleep very quickly! This gave me a bit more hope about the book, as it was obviously helping her get to sleep!

Night 3(tonight) – She wasn’t as convinced that she wanted the same story again (I don’t blame her!) but I told her that I would change the names to whatever she wanted again and then she was excited for it again! She lay in her bed and I sat on the floor from the start so that she would be able to get comfy! At the start she was asking me questions and could I change the story etc.. So I tried to a bit!(oops sorry!) Though it was just missing out certain bits that I knew got her asking questions etc .. she curled up to how she normally falls asleep before the first page had finished and then stopped asking questions, was shuffling about so I carried on reading.. by some miracle she was asleep by page four! I was amazed.. I came skipping downstairs to my husband to let him know how quickly she had fallen asleep, without any questions or being told to lay day several times! She just did it all by herself! This book really works!

Now for my review and honest thoughts on it all;
It is absolutely fantastic that this book made her go to sleep while I was reading it, even if it wasn’t the first night, it clearly helped her relax greatly! I am still amazed that a book could help her fall asleep and that she didn’t get bored by it, or tell me that she wanted something else! I can see how it works because the amount of times that the word sleep/relax is incorporated into the story! I’m hoping to read it to her one more night and then be able to read her other stories and she will fall asleep to any one as she knows that she can then relax and listen to the story rather than asking 101 questions about why someone is saying what, or doing what etc! I wouldn’t want to be reading her this book every night mainly because at the moment there is only one and she will quickly bore of it, though they do plan to make more!  Also because I rather enjoy letting her chose a book at bed time! I do think I will incorporate this book into our life though! If she has had a long day, is going to have a long day the next day, or has something stressful (first day of preschool) etc coming up I will read it to her then!
So; if you have a child who is difficult at bed time, i really urge that you try out this book! You will not know what has happened! Give it a few days though and don’t expect it to work straight away! You must try it though!  :]
