Blackberry Picking!

Today I had a lovely morning out with the kiddiwinks! We headed to a lovely little village called Groomsport! Its a little village by the sea, is very peaceful, beautiful and has many things my little ones love!

IMAG1680.jpg

We started off by going for a little walk along the front, counting the boats we saw, blowing the dandelions that we found and making lovely wishes, then we discovered a place that we hadn’t found before! A little National Trust walk called Ballymacormick Point, I don’t know how I haven’t found it before or walked along there before! It was wonderful and even more so because we found some ripe and very yummy blackberrys! My little girl loves all kinds of fruit and veg and was very excited to try some blackberrys that she had picked straight from the bush!

As we carried on our walk I had a hunt in my handbag and managed to find a little ziplock bag, my little girl jumped with delight at the thought of collecting some and taking them all home. We carried on with our walk and kept collecting them while we were discussing what to do with them, a little lady who walked past us stopped for a chat with us as my little one was eager to show her all that we had collected! She suggested that we could try making a pie or some jam and that was that we were settled on making some jam once we got home! (recipe) The hunt carried on and we came across a honey bee! (She loves bugs too :P)

The honey bee was collecting pollen and was fascinating to watch, we watched him as he went from flower to flower and she asked me question after question! She asked me so many questions that she didn’t notice her little brother stealing the bag of blackberries from her hand.. he then decided to squish them and she broke out in laughter as we watched all the juices in the bag go everywhere (thankfully not over anyone!)

We then turned back after picking some blackberries to make our jam and headed for the little shop to grab an ice lolly and a drink then on-wards to the wonderful little park! The park in Groomsport is wonderful, not only do you get to enjoy a lovely view while your little ones are enjoying themselves, a big and a small climbing frame and there are gates all around it so a little one cant wander off. Wandering off is my little mans favorite thing, he loves just tottering about and exploring and wouldn’t have much interest in the park so when it is just me with them both it is pretty hard for either to enjoy! With him not being able to escape and wander off it was perfect as he could just dander around the park while she had lots of fun on the climbing frame/swings etc! He then found his favorite thing and one of the only things he will play on in a park.. a bridge! He loves just walking back and forth across the bridges, he would happily do that all day long if you left him to it!

After the park we headed to the little paddling pool and she had lots of fun running about in it as she had come prepared wearing some shorts! My little monkey man was safely back in his pram and enjoying the views and after that we headed home to make some delicious homemade blackberry jam! I’ll pop the recipe up shortly for if you fancy giving it a try! Here is the recipe! Very simple/fun and delicious!

Early Christmas Present <3

My absolutely wonderful husband treated me to the most amazing early Christmas present!

wpid-img_20151102_090910.jpg

Nutmeg. My new beautiful baby! We call her Meg, but I choose Nutmeg as she is the same kind of colour as Nutmeg and it reminds me of chirstmas and she was a christmas present! As soon as I went to see her, I knew that she would be part of my ohana! Infact.. as soon as I saw the advert for her I fell in love! My sister had recently bought Megs foal and I had went up to see her with my sister and she is such a lovely a horse, my sister has called her Cub! When I saw her I thought she was lovely, super friendly and just beautiful! So as soon as the advert for Meg was up my sister tagged me in it, and I just knew straight away I had to go and see her!

This is my sisters horse Cub;

Aren’t they both just simply beautiful?

Meg is stabled in a beautiful livery yard just a five minuite drive from my house which is just super! All the people there seem super lovely and I have already started to make friends there which is super, as I am sure that other mums reading this know that it is pretty hard to try and “find” friends whenever you are with them, you always end up being “whoevers mum” and just chat in the playground really! At least thats how I find it!

Getting Meg has already started to really help me, I have had a pretty tough year this year and discovered a few things about myself which are always going to affect me, so having an outlet and somewhere for me to relax and get some “me time” is just fantastic! Not only that but she is so calm and loving! She hasn’t been in my life that long but we have got an obvious bond already! She chases me about the sand-school whenever I run about with her and is always so happy to see me, she is just wonderful! She has only recently been broken, but is very quiet and willing to please! Meg is coming on leaps and bonds and I myself can’t even believe how quickly she is progressing! I think as she is building my confidence I am building hers which is perfect really! The next thing to tackle is jumping.. may wait until my sister is with me to do that though 😛

Meg is a 14.3hh Welsh x Haflinger and is just simply beautiful! Has a wonderful nature and no badness, Well maybe likes to shove you a little, but she will soon learn =D

Here are some more pictures of my beautiful girl!

Do any of you have a horse/pony? I would love to see a picture and hear some advice!
Seems my Wee Ohana, is getting a bit bigger pretty quickly!

Thai Green Curry

I decided that I wanted to try and make something different for myself and the hubby! When I was in Wales visiting my family my aunt made this amazing Green Thai curry so I asked her for the recipe! Whenever I made it, it was also delicious so I thought I would share the recipe with you guys! It was off BBC Good Food! I don’t have a link to the recipe on there as she emailed it to me without the link! On the recipe I followed the numbers at the end in Brackets, this made 4 lots of the curry paste! So I froze three so that it is an easy meal to make whenever we fancy it again! I made it with chicken! I know some of the ingredients sound a little strange, but I got them all easily from a supermarket.

Here is the recipe for the curry paste;

Ingredients – enough paste for 4 ( x 4)

2-3 medium green chillies, de-seeded and roughly chopped ( 8 )
1 shallot, roughly chopped (1 large onion )
2.5cm/1in piece of fresh ginger, peeled and grated (10cm )
1 garlic clove, crushed ( 4 )
small bunch of fresh coriander, stalks and roots attached ( large bunch )
1 lemongrass stalks, chopped ( 3 tsp from jar )
½ lime, grated zest and juice ( 2 )
4 kaffir lime leaves, torn into pieces (if unavailable, grated zest of ½ extra lime) ( 10 )
1.5cm piece galangal, peeled and chopped (use extra ginger if unavailable ) (2 tsp jar )
½ tbsp coriander seeds, crushed ( 4 tsp ground )
½ tsp ground cumin ( 2 tsp)
½ tsp black peppercorns, crushed ( 2 tsp from mill )
1 tbsp Thai fish sauce ( 4tbsp )
1½ tbsp olive oil (5 tbsp )

Method

Blitz everything together in a food processer or mix everything by hand using a pestle and mortar (or plastic bowl and end of a rolling pin if you dont have one of these either). By hand gives you a chunkier paste but the flavours are as good and it feels a bit more rustic

This is how my paste looked after it was all made!

Then I added it to a big saucepan, added a tin of coconut and brought it to the boil! After that then I added the chicken which I had previously diced and brought the paste down to a simmer! I then left that to simmer for half an hour.. and hey presto it was done and delicious! Even if i must say so myself!  So as you can see it is really a quick and easy meal once the paste has been made!

This is it cooking in the pot;

I then made some noddles and a nan to go along with it! Here is a picture of the finished thing;

I would love to hear if you guys make this and what you think of it! Enjoy! =]

Blah,blah,blah

Even though I am in a great deal of pain, and my bump is somewhat massive and still growing, I just don’t seem to feel pregnant! I am finding it really strange mainly because of how this pregnancy has gone, hasn’t been smooth sailing at all like my first and has been constantly reminding me that I am pregnant. I mean, I know I’m going to have a baby, it just doesn’t feel real! its confusing to explain.. I’m sure your probably all reading this thinking, what is she going on about! I suppose the easiest way to explain it, is I know I’m having a baby, but it doesn’t feel like the baby will be here in less than two months!

Today to try and help myself realise that a baby will be in this house shortly, I built & made the cot up! Luckily my lovely mum came round to help me, because with my SPD I really couldn’t have managed to do it by myself while trying to contain a three year old too! It is very upsetting and makes me feel very weak and pathetic that I can’t do these simple tasks! I also think that is another reason why I don’t feel like the baby will be here soon, or at least am in denial about the baby being here so soon because I can’t do things to prepare the house and all that fun jazz! I must say though my mum and my family have been such a fantastic help through all this! I really do appreciate all they do for me! At the moment I am relying on my mum a great deal because my hubby works shifts, which sucks in these kind of situations. well actually it sucks full stop, but I can’t complain because when he is here, he is fantastic its just the trying to get him here and awake! My mum though really is my best friend, she is just so wonderful! She has been taking me wherever I need to/fancy going, taking my little one to and from play school and plenty of other things. I think without her help at the moment I would end up just staying in bed all day watching DVDS with my little girl eating rubbish all the time! Though now that I think of doing that, it actually sounds like a good plan! =D My sister and my dad have also been great, as they have taken my little one out on adventures and stopped her from being trapped inside. Taking her out also helps to waste her energy.. she is very energetic for a little one… she would run circles all day constantly while talking if you let her!

Anyway, I got distracted sorry! So we built the cot and got the bedding put on to it, it is such a cute little themem and I am even happier with it now it is on the cot! I loved it when we bought it.. obviously, or I wouldn’t have bought it, but now that it is on and all set up, it is so beautiful! Here is a little picture so that you guys can admire it too!

isn’t the turtle just wonderful! I have the matching changing mat, towel, and all that kind of jazz that you need for a bay! 😛  Now I am just on the count down till the wardrobes and the rest arrive! Not long now, they are being delivered on Tuesday! Then I can get the mountain of clothes sorted and his room will start to look like a room, rather than a dumping ground for clothes and the likes!

I didn’t think my bump could get any bigger.. but every morning when I wake up it seems to be getting bigger and my clothes are getting smaller! I’m sure one of these days my tummy is literally going to explode! This morning actually my little girl said the most cutest thing ever, she cuddled into my bump and said “you are going to be the best baby brother, I can’t wait to change your nappy. I love you” How precious ❤ Though if she is interested in changing the nappies, she may work away.. I must admit that isn’t the bit I am most excited for!

Here is my 33+2 bump! I feel huge! =[ what do you think?
