Blackberry Jam!

I made this with my little girl, we had so much fun and it was super simple!

Ingredients

  • Blackberries
  • Sugar (same amount as blackberries!)
  • Lemon Juice to taste

Method

  1. We first of all started off with going blackberry picking to get our most important ingredient! My little girl had so much fun doing this, we walked along and she picked the ones she could reach and pointed out too me the ones up high for me to pick! Obviously taste testing some as we went along! 😛
  2. Next we measured out how many blackberries we had, washed them under some warm water and then put them into a bowl! (we didn’t have a large amount)IMAG1719.jpg
  3. Then we mashed the blackberries up with our potato masher! This was lots of fun and a bit messy when she decided to see how fast she could do it..IMAG1722.jpg
  4. The sugar then is to be added, for us this was 1 and a half cups as we had one and a half cups of blackberries! Then mix it all together. Now is when you can add the lemon juice to taste if you want! We added a tiny little splash.IMAG1724.jpg
  5. Then pour the mixture into a saucepan, bring it to the boil while continuously mixing it! Once it has reached the boil, reduce the temperature down and stir it for a few more minutes.IMAG1725.jpg
  6. Finally find some old jam jars preferably to put it into! We didn’t have any so we used some bowls with lids that we had in the house, so anything can do really! Pop it into the fridge for a few hours to cool down. IMAG1729
  7. Find some nice bread and enjoy! .. Again we didn’t have any nice bread in the house and she was an eager beaver to try something that she had made! So we put it onto a bit of toast and really enjoyed it!

Traditional Sweets!

Sugar Mice! These little sweets full of sugary goodness hold some great memories for me! When I saw a recipe for them in my daughters magazine I knew that I just had to make them! When I looked at the recipe I was amazed at how few ingredients they actually required! With it coming up to my dads birthday I decided that I would make them for him, seeing as he loves them and they seem to be one of the few sweets he eats!

The memories that they hold for me are greatly linked to my dad too! He loves rugby, he is a very huge rugby fan! Hence the present I have got him (WRU polo shirt!) So, anytime that went to a rugby match over in Wales, we used to get a bus in from my aunties house, then walk from the stop we always got off at, through a little market and he would always go into this little old sweet shop that had the sweets in the big jars, and sugar mice! He would come out with one each for all of us, we would then thoroughly enjoy eating them then,then carried on the walk to the rugby ground!

Now, onto the recipe!

Ingredients! (Makes 12)

  •  1 Egg White
  • 1 Tsp Lemon Juice
  • 500g Icing Sugar (Sifted)
  • Pink Food Colouring
  • Small Chocolate Sprinkles (or something small for eyes)
  • Thin String (strawberry laces also work!)
  • Baking tray, lined with baking parchment

Recipe!

  1. Put the egg white into a bowl and whisk until it turns foamy
  2. Slowly add in the icing sugar and stir as you are doing it. It will turn into a dough!
  3. Divide the mixture into two bowls and add some pink food colouring and kneed it into the dough type mixture.
  4. Break off conker sized pieces and then roll them into a cone shape. The narrow end will then be the mouses nose.
  5. Pinch little cute ears on to the mouse, then use whatever you have chosen for the mouses eyes and push them in.
  6. Cut a length of the string and then push it into the dough at the back.
  7. Use the Pink food colouring to add a little nose.
  8. Repeat until you have used all of the mixture and then leave them on the baking tray to dry out for at least 12 hours!
  9. ENJOY! =D

It is a lot harder to make that little mouse shape than it looks to be honest! I would love to see if you guys have made these and how you found it! My little girl tried to help make these and she just ended up getting annoyed at it! She decided to just make a “Mouse squish” .. basically just crushed the mixture! lol!

Thai Green Curry

I decided that I wanted to try and make something different for myself and the hubby! When I was in Wales visiting my family my aunt made this amazing Green Thai curry so I asked her for the recipe! Whenever I made it, it was also delicious so I thought I would share the recipe with you guys! It was off BBC Good Food! I don’t have a link to the recipe on there as she emailed it to me without the link! On the recipe I followed the numbers at the end in Brackets, this made 4 lots of the curry paste! So I froze three so that it is an easy meal to make whenever we fancy it again! I made it with chicken! I know some of the ingredients sound a little strange, but I got them all easily from a supermarket.

Here is the recipe for the curry paste;

Ingredients – enough paste for 4 ( x 4)


2-3 medium green chillies, de-seeded and roughly chopped ( 8 )
1 shallot, roughly chopped (1 large onion )
2.5cm/1in piece of fresh ginger, peeled and grated (10cm )
1 garlic clove, crushed ( 4 )
small bunch of fresh coriander, stalks and roots attached ( large bunch )
1 lemongrass stalks, chopped ( 3 tsp from jar )
½ lime, grated zest and juice ( 2 )
4 kaffir lime leaves, torn into pieces (if unavailable, grated zest of ½ extra lime) ( 10 )
1.5cm piece galangal, peeled and chopped (use extra ginger if unavailable ) (2 tsp jar )
½ tbsp coriander seeds, crushed ( 4 tsp ground )
½ tsp ground cumin ( 2 tsp)
½ tsp black peppercorns, crushed ( 2 tsp from mill )
1 tbsp Thai fish sauce ( 4tbsp )
1½ tbsp olive oil (5 tbsp )

Method

Blitz everything together in a food processer or mix everything by hand using a pestle and mortar (or plastic bowl and end of a rolling pin if you dont have one of these either). By hand gives you a chunkier paste but the flavours are as good and it feels a bit more rustic

 

This is how my paste looked after it was all made!

Then I added it to a big saucepan, added a tin of coconut and brought it to the boil! After that then I added the chicken which I had previously diced and brought the paste down to a simmer! I then left that to simmer for half an hour.. and hey presto it was done and delicious! Even if i must say so myself!  So as you can see it is really a quick and easy meal once the paste has been made!
