Appy Kids Co!

With it being the summer time I am finding it nearly impossible to keep snacks and drinks in the house, aren’t you?!
My little girl is an eating, drinking, talking and moving machine, so whenever the lovely team over at appy kids co asked me if I could review some of their new drinks and snacks that aren’t even out in the shops yet, I couldn’t wait to get my hands on them for the kids to enjoy!

Whenever the drinks and snacks from appy kids co arrived Amellia was super excited that they were covered in minions! We love the minions movie in our house. It always provide us all with giggles, smiles and  quality time together. Having a much-loved film on healthy snacks and drinks is also a great way to encourage children to eat them. Thankfully for me though, Amellia will try anything at all and enjoys near enough everything! With Dylan, it wouldn’t make any difference what was on the packaging etc, it just depends on what the actual food looks like.

Amellia got stuck right into the juice as soon as we opened it, and she really loved it! She finished it right up and she then polished off a pack off the Mulberries & Raisins and had another two packets and gave her little brother a pack too!  She tried to give her brother a drink too, but unfortunately this ended up him covered in juice as he just squeezed the pouch! Though with a little help with his next one he really enjoyed it, and was trying to get some of his sisters on too!

img_8817These drinks and snacks were thoroughly enjoyed and I am always glad to be giving my children healthy alternatives! Unfortunately only one store in Northern Ireland stocks them, but if I am ever in the direction of the shop I will be sure to pop in and grab more!

Treat Day!

We try to ensure that Amellia gets to go out at least once a month with one us to do whatever she wants. Sometimes she picks swimming, other times clothes shopping but something she always picks is to go out for dinner! She loves her food and unfortunately going out for dinner as a family is something that we don’t do very often at all as Dylan is not a good eater, and all the noises, bright lights, people and smells just send him into meltdown.
Before Dylan was even born this was something that we had decided we would make sure we did, I think its important for all children to get a chance to do whatever they want for a day, have all the attention on them and be made to feel as special and wonderful as they are!
It is even more important to us now with everything that we are going through with Dylan as I don’t want her to miss out on all the typical “kid” things that he wouldn’t particularly enjoy. I also don’t want her to grow up resenting her brother because she didn’t get to do things she wanted to because of him. We try our best to do things as a family but it is tough, and I don’t like taking her out and having to say her to her that if Dylan doesn’t like it we have to go. She is wonderful with him though because if I take them to the park and he starts to get  upset she will come over to me and say “ok mummy time to go!” As much as this is wonderful, it’s not fair on a five-year old.

On our day out she decided she wanted to start with lunch at Little Wing Pizzeria! What a wonderful little spot, I love it. I am simply a huge pizza fan and they make exceptionally delicious ones! When we sat down she was super excited to pick off the menu herself and then get to colouring it in! She chose the minestrone soup as she liked the sound of it coming in a cup! When it arrived it was super cute in a teeny tiny cup, and she dove right in. Unfortunately though she wasn’t a big fan of this soup but to make it an even better experience the girl serving us then got her dough sticks  instead which she quickly devoured! Not only was this fantastic customer service but when she brought her over the dough sticks she told Amellia that is was great to try new things and that she was a super girl for trying the soup!

whilst we waited for our mains then we got a chance to colour in the menu, it was wonderful! They had little bits for you to draw what you thought certain things would eat and a picture for you to find other items in and colour them in, she had a lot of fun doing this and got really excited when she found the things we were looking for in the picture! She had lasagna for her main and she really loved it, she ate it all up and enjoyed it so much!


One of her favourite parts of the dinner was getting an ice cream and a little mini hot chocolate in another tiny little cup! Unfortunately I didn’t take any pictures of these but they were just adorable! She also loved the fact that she got to have coke with her lunch and thought it was super special that it was in a glass bottle and not a little plastic cup!

She then wanted to do a spot of shopping, so we popped into a few of her favourite shops and picked up a few bits and pieces. We then headed home and told her daddy and brother all that we had been up to and how she can’t wait to go there again!

Ohh, I forgot to also tell you how wonderfully delicious my dinner was from Little Wing too, one of my favourite things that they do is there spicy cheesy bread for starters! I then had one of their pizzas for main which was just super as always.. I can’t remember exactly what one it was..doh.. but I do remember that it was yummy! We will certainly be back soon, I can’t wait for my next day out with her.
She is simply wonderful and really does not get enough credit ❤

More Fudge!

Yes, I know my most recent blog was one about fudge but after making that simple fudge I remembered the fudge that I made last Christmas so I thought I would share it with you too! This fudge is pretty simple to make too, but not quite as simple as the last one! No thermometer or anything though so us folk without one can make this too! =D

          Ingredients

  1. 350g Icing Sugar
  2. 75g Unsalted Butter
  3. 4 Teaspoons Milk
  4. 1/2 Teaspoon Vanilla Essence
  5. 75g Pink & White Marshmallows or Small Ones!
  6. Sprinkles
  7. Small Baking Tray
  8. Baking Paper

Method

  1. Line the Baking Tray with the baking paper
  2. Use a sieve sift the icing sugar into  large bowl and make a hollow in the middle 
  3. Put the butter,milk and vanilla essence into a small pan. If you have used large marshmallows cut them in half! If you have used the little ones like me, then you can just put them in!wpid-imag6645.jpg
  4. Gently heat the marshmallows etc in the pan and stir the mixture every so often untill it has all melted!
  5. Pour the mixture into the hollow of the icing sugar and then quickly mix it all together untill it goes smooth!
  6. Pour the mixture into your baking tray and spread it out so it is all flat
  7. Put the sprinkles on top! Make sure you push these into the  fudge so they they will stay there! wpid-imag6647.jpg
  8. Place it in the fridge for a few hours

Simple Chocolate Fudge!

I saw a video of someone making this fudge online and could not believe how simple it was! I was sure it wasn’t going to taste as great as it did but it was super fantastic so had to share it with you all!

Ingredients

  • 1 tin of condensed Milk
  • 400 grams of chocolate
  • baking tray to put it in (mine was 9″x9″)
  • baking paper

Seriously that is all the ingredients you need!

Method!

  1. Line your baking tray with baking paper
  2. Put all of the ingredients in a bowl wpid-imag6497.jpg
  3. Mix them all up and put it in the microwave on high for 1 minuite .. if the chocolate doesn’t seem melted enough put it in for another 30 seconds. I have a 800watt microwave and went for 1min30 and it was  perfect!                       wpid-imag6501.jpg
  4. Pour into the baking tray lined with baking paper and put it in the fridge for 4-5 hours .. the longer the better!
  5. Take it out and lift the fudge block out of the baking tray using the baking paper, then place on a plate upside down and peal off the baking paper (slow and steady then comes off all in one go!)
  6. Cut it up into squares with a sharpish knife and enjoy! wpid-imag6518.jpg

It is simply delicious and so super easy to do! Great for parties, playdates .. anything!

Traditional Sweets!

Sugar Mice! These little sweets full of sugary goodness hold some great memories for me! When I saw a recipe for them in my daughters magazine I knew that I just had to make them! When I looked at the recipe I was amazed at how few ingredients they actually required! With it coming up to my dads birthday I decided that I would make them for him, seeing as he loves them and they seem to be one of the few sweets he eats!

The memories that they hold for me are greatly linked to my dad too! He loves rugby, he is a very huge rugby fan! Hence the present I have got him (WRU polo shirt!) So, anytime that went to a rugby match over in Wales, we used to get a bus in from my aunties house, then walk from the stop we always got off at, through a little market and he would always go into this little old sweet shop that had the sweets in the big jars, and sugar mice! He would come out with one each for all of us, we would then thoroughly enjoy eating them then,then carried on the walk to the rugby ground!

Now, onto the recipe!

Ingredients! (Makes 12)

  •  1 Egg White
  • 1 Tsp Lemon Juice
  • 500g Icing Sugar (Sifted)
  • Pink Food Colouring
  • Small Chocolate Sprinkles (or something small for eyes)
  • Thin String (strawberry laces also work!)
  • Baking tray, lined with baking parchment

Recipe!

  1. Put the egg white into a bowl and whisk until it turns foamy
  2. Slowly add in the icing sugar and stir as you are doing it. It will turn into a dough!
  3. Divide the mixture into two bowls and add some pink food colouring and kneed it into the dough type mixture.
  4. Break off conker sized pieces and then roll them into a cone shape. The narrow end will then be the mouses nose.
  5. Pinch little cute ears on to the mouse, then use whatever you have chosen for the mouses eyes and push them in.
  6. Cut a length of the string and then push it into the dough at the back.
  7. Use the Pink food colouring to add a little nose.
  8. Repeat until you have used all of the mixture and then leave them on the baking tray to dry out for at least 12 hours!
  9. ENJOY! =D

It is a lot harder to make that little mouse shape than it looks to be honest! I would love to see if you guys have made these and how you found it! My little girl tried to help make these and she just ended up getting annoyed at it! She decided to just make a “Mouse squish” .. basically just crushed the mixture! lol!

Remembering the Good <3

Time just seems to vanish at the moment, since having my little man i seem to blink and a week disappears! It doesn’t seem like ten days since I last blogged.. more importantly it is nearly impossible for e to believe that he is 7 weeks old today… did I have a giant sleep through a few weeks after having him?!?

Some days it feels like he has been here forever, we have a lovely little routine (which generally works..) his big sister is completely in love with him and everything goes as smoothly as it can with a three year old and a 7 week old! I can’t wait for it to be the summer so that I can start taking hem both out for long walks and explorers as right now it is a little cold for him to b out and about for a long period of time..

Other days I don’t know how i cope. My three year old doesn’t listen or help and the little man just wants to be held constantly, which obviously just can’t always happen so easily whenever I am trying to entertain my little girl! These days I just want to scream, run and hide. I think that there is no way that I am going to get through the day.. but I manage! Mainly because of my fantastic hubby, who doesn’t always know how rough of a day it has been but will aways make me smile and give me a cuddle when he gets through the door from work! Then there is my mu, who I know no matter what that she is just a little phone call away and if i’m really struggling she will be with me as quickly as she can to help. Generally I just call and ask what is she up to and does she fancy coming round for a cuppa, because one thing I’m not to great at is asking for help or support. I feel that if i ask for this then I am admitting defeat and that I wouldn’t be able to do it all on my own. I like to think that no matter what happens I would be able to cope on my own and handle the kids, suppose most people like to know they can do it on there own, but I know I must work on opening up to people about how I feel and to ask for help when I need it rather than just hoping that they will see that I need it. Talking about emotions and how I feel about anything at all though isn’t a strong point at all for me

The main thing that gets me through the hard days, is remembering the good. Remembering how fantastic and well behaved my little three year old ca be when she wants to be. That I have a great support network full of family & friends;Also how lucky I am to have a beautiful loving family, a roof over our heads and full tummies.
